Tempeh Sausage Patties!

I prefer "sausage" links, but my boss at Veggie Planet asked me to develop a patty friendly recipe for Sunday Brunch because our current recipe is GROSS! It actually looks like wet cat food. I don't know how anyone orders it on their own. But it does taste okay on what we call a potato-sausage pizza, which when made vegan has homefries, tempeh sausage, tofu eggs, vegan cheese and maple syrup on top. Pretty decent idea actually. But anyways, this is what I came up with. Please make it and let me know what you think! It's a really nice breakfast sausage but I wouldn't really consider it versatile enough for a dinner type sausage. The rolled oats make it AM friendly and add a nice texture.



Tempeh Sausage (makes about 10 breakfast sandwich size patties, because let's face it, that's all I want these for. UGH sausage, daiya, slice of marinated tofu, salt, pepper, ketchup, sauteed onions and peppers, and some spinach or arugula on an everything bagel! Have mercy! what else could you possibly want in the morning???) See above glorious sandwich.

1 package of tempeh (I like 21st century which is a local company based in JP)
3 cloves of garlic, minced
1/2 small onion, minced
3/4 cup rolled oats
10 TB vital wheat gluten flour
1/4 cup of water or broth
1/2 tsp slightly crushed fennel seed
1/2 tsp crushed red pepper flakes
1/4 tsp smoked paprika
1/8 tsp cayenne
1 tsp oregano
1/2 tsp thyme
1 tsp ground sage
3/4 tsp of Better than Bouillon beef style
1/4 tsp of salt or little bit of tamari
1 1/2 TB olive oil
1 TB maple syrup
1/2 tsp liquid smoke (optional)

Combine all ingredients in a large bowl and knead with your hands until all is combined and gluten strings form. Let the dough rest for 5 minutes then go ahead and form into patties. Steam them for one hour. They should be firm and solid. Then go ahead and pan fry until golden brown on both sides.
