An Herby Red Grape Tofu Salad


Eat. 4. days. This is nothing too fancy but is very filling, yummy, and picnicable.  

1/4 red onion, minced
2 stalks of celery, halved lengthwise and sliced
2 small cloves of garlic, microplaned
1/2 sprig of rosemary, minced
2 Tb finely chopped cilantro
2 carrots, shredded
1 cup red grapes, halved
2 Tb fancy stone ground mustard
2 tsp apple cider vinegar, raw
1/2 tsp of curry powder, or to taste
white pepper, black salt, regular salt
dash of cayenne
1/2-3/4 cup of veganaise
1 tomato, chopped
1 package of firm tofu, pressed for 15 minutes and crumbled

Combine! Let it chill out for a few because it gets better with thyme, time. I don't know. Served with daikon sprouts.
