simplisitic. cauliflower. soup.

This literally took my 15 minutes to make which was helpful because I was very very hungry.  I have too much cauliflower in my fridge, so something had to be done.  Off with the head!



Cauliflower Puree:

what you need: immersion blender, pot, bamboo steamer if you got it.


Ingredients:

1 head o' cauliflower
1 tsp white wine vinegar
1 tsp salt
1/4 tsp garlic powder
white pepper to taste

2 Tb margarine
2 Tb "sour cream"
a pinch of guar gum to maintain creaminess
1/2 cup of oat milk
more water as you see fit
Steam the cauliflower in the bamboo steamer for 10 minutes.  Transfer to a pot with all the aforementioned ingredients and puree.  The water than you add while you puree all of this should be the water left over in your wok from the cauliflower steaming.  Yum! Nutrient rich cooking water is the best! 


Serve with pesto!! Like this one:


Sunflower Pesto with Dill and Basil


a huge handful of basil
1/4 cup of dill
2 cloves of garlic
a wollop of olive oil
juice of half a lemon
salt to taste
1/4 cup sunflower seeds, raw!


Chop up the garlic roughly, destem the herbs and throw all of the ingredients in the food processor.  You may need to add like 2 Tb of water.  Yay! So easy!! Also, if you aren't a big fan of garlic, only use 1 clove. 


Serve the puree with a dollop of pesto and there ya go! Or if you happen to have some leftover quinoa in the fridge, throw that in the mix and now you have a real meal and a quick lunch.
