Toast your pumpkin seeds!

I finally toasted the seeds from last week's pumpkin.  Took long enough! It's easy though.

As soon as you are dismembering the pumpkin, throw the seeds in a bowl and remove the big hunks of membrane.  Then transfer to a colander and rinse with lots of cold water, smooshing all the seeds with your hands removing the pulp.  Spread the seeds out on a clean towel and let dry for like an hour. 

Combine the seeds, 1 TB oil, I used grapeseed, curry powder, cinnamon, sea salt, sugar and all spice in a bowl and toss.  You can use just cinnamon and sugar if you want...or essentially any combination of your favorite spices.  Use enough that the seeds will be coated but not overwhelmed by the flavor of the spice, especially curry.  I think I had a cup of seeds and used about 1/2 tsp of curry powder. 

Now spray a baking sheet with Pam and spread out the pumpkin seeds in a single layer.  Preheat the oven to 275F.  Roast for 27 minutes.  That's how long it took in my oven, but start keeping an eye out at the 15 minute mark especially if yours runs hot.


Done! Please don't eat the whole seed especially if you have intestine/stomach problems.  If you have Crohns, throw the damn seeds out immediately.  :-)
