Grits and Veggies

This is my ideal breakfast plate.  Ready?

Creamy Grits with Nooch and Daiya, Braised Brussels Sprouts with garlic, butter and thyme, Baked Sweet Potato with Creamed Honey and Butter, and Pan-fried bacon


This is part of my search for a vegan bacon that I like.  I made this one out of tempeh, wheat gluten, chickpea and teff flour, olive oil, paprika, some other spices.  I made a dough, rolled it out, sliced it up, steamed them, and fried accordingly.  It was a little chalky but pretty good! Not perfect, but definitely worth the experiment.  But really though, what else do you need for breakfast?
