Smokey Apple Tofu with Collard Greens, Fennel and Israeli Couscous

Lunch date!

Prepare the Marinade:

1/4 cup plus 2 TB of apple butter
3 Tb tamari
2 Tb lemon juice
1 tsp hefty mustard

red pepper flakes
Chinese five-spice
black pepper
tiny bit of liquid smoke

Extra firm tofu pressed and cut into rectangles


 Collard greens, one bunch cut into strips, like so...


Lay em flat.

Roll em up!

Slice Slice Slice! Ra rA! Go team!

Place all of the following ingredients in a little bowl for when you cook the greens.


 Sesame oil

1 Tb lemon juice

1 Tb orange juice
Braggs or tamari to taste
some water

Fennel, roasted with olive oil, salt and pepper. You can do this at the same time as the tofu if you didn't already have it prepared like I.


Grain of choice- I used Trader Joe's Harvest Blend

Okay now make it happen.


Bake the tofu at 400F in marinade for 50 minutes, flipping halfway through. Line the baking pan with parchment paper if you don't feel like cleaning the caramelized marinade off later. :-) It really does get messy.



Cook the grains according to directions around the 30 minute mark. 



When the tofu is done, heat up the sesame oil in a wok that has a cover, add the greens, saute for 1 minute or until coated, add the liquids and cover quickly.  Steam for 2 minutes or so. 



Serve the grains, fennel, greens and tofu all together! in one happy family!


The apple tofu was really yummy, even more so the day after.  Enjoy!
