Escarole and Bean Soup!

This is the most wonderful and simple gem in the world!! Well, at least I think so especially when you are snowed in, watching Lord of the Rings, and poking at a fire.  I mostly did the watching while Cath cooked and poked.  Thanks ma! Can't wait to make this again.  A childhood staple, escarole and beans is an Italian treat that is really already vegan! Cath puts a bunch of Parmesan cheese on top but some freshly cracked pepper is just as yummy and even healthier.


Okay, so you'll need 2 bunches of nice, dark looking escarole, washed, torn, and blanched the same way you would make broccoli rabe; chopped garlic; 2 cans of beans, one of white cannellini and one of red kidney beans; half reserved bean juice; little bit of broth; a touch of nutrient-rich, reserved escarole cooking liquid; lots of olive oil; salt and pepper


Add the chopped garlic to the olive oil and allow the flavor to be extracted.  Then add the blanched escarole, saute for just a minute. Add the liquids, beans, salt and pepper, bring to a boil and then let simmer for 10 minutes until well incorporated and just slightly reduced.  This is not meant to be overly brothy.  The escarole is the star!

Serves 2 very hungry people or 4 normal people that are possibly eating something else with the meal and have just a smidge of will power.  You will definitely come back for more!  Don't forget the crusty Italian bread!
